Banana Cake (Kelay ka Cake) Recipe

Pound Batter Dough:
 
bullet 150 g soft butter beat until creamy
bullet 200 g brown sugar add and mix
bullet 4 eggs, slightly beaten add and mix
bullet Soaked raisins add and mix
bullet 400 g peeled very ripe bananas and
bullet 1 tablespoon lime juice mash with a fork or blender and add to mixture
bullet 150 g roughly ground walnuts add and mix
bullet 350 g flour and
bullet 3 teaspoons baking powder sift into mixture
bullet 2-4 tablespoons milk only add if texture is too thick.
bullet The mixture should have a dropping consistency. Spoon dough into the baking tin.
  • Line and grease a loaf tin, measuring 28 cm, and dust with flour. Keep ready. Soak 50 g of raisins for 20 minutes; set aside. Preheat the oven. Bake for about 60-75 minutes in medium hot oven or until cooked when tested with skewer. Cool before removing from the baking tin.
