bullet 75 g butter or margarine
bullet 350 g liquid apple sauce
bullet 700 g flour
bullet 1 tbsp soda bicarbonate, sifted
bullet 2 tbsp vanilla essence
bullet 2 tbsp cinnamon
bullet 1 tbsp nutmeg
bullet 250 g raisins
bullet 250 g walnuts
bullet 350 g sugar
Apple Sauce Ingredients
 
bullet 1 kg apples
bullet 25-50 g butter
  • Cream butter or margarine in a large bowl, add sugar and beat well. Add apple sauce, a little at a time, beating well till all apple sauce is consumed.
  • This may curdle a little. Gradually add flour, nutmeg, cinnamon, soda and blend well. Add vanilla essence and the nuts and raisins that have been sprinkled with flour to prevent them from sinking to the bottom while baking. Use an 8 inch baking tin.
  • Bake in a preheated oven at gas mark 4/180º C for 45-60 minutes.
  • Chef’s tip: Serve as a dessert with whipped cream. This cake tastes better if made a day before serving.
     
  • Apple Sauce Direction: Peel, core and slice apples and cook in a covered saucepan to a pulp. Beat with a wooden spoon and add the butter.
