Pastry Dough |

This dough is easy to
make and can hardly fail, if the exact proportions, given in the
recipe, are used. All ingredients should have room temperature. |

Basic ingredients
(From the Swiss Tart recipe and others)
 |
200 g flour
sift into a big bowl |
 |
100 g salted
soft butter add and rub into flour with fingers until
mixture looks like breadcrumbs |
 |
3 tablespoons
fine sugar add and mix |
 |
1 small egg,
beat slightly and add |
 |
1 tablespoon
cream add |
|

Basic Dough
- Step-1
Rub butter and flour with finger-tips until it looks like
bread-crumbs.

- Step-2
Press dough together into a ball

- Step-3
Cover with a damp cloth.

For a Pie Dish
- Step-1
Roll out dough on a flourdusted surface. Fold it into half
and then into a quarter, place it into the dish and then
unfold it again

- Step-2
Trim off overlapping dough with the rolling pin and fit into
the pie dish.

For a
Springform
- Step-1
Place the base on a cloth or a towel to prevent it from
slipping. Put the dough on the base and cover with a plastic
foil. Go over the dough with the rolling pin, remove plastic
and cut off the edge.

- Step-2
Make a roll of the remaining dough, place it around the
inner side of the rim and pull it up with fingertips to make
an edge.

Blind Baking
- When
blind-baking, cover dough with aluminum foil or a butter
paper and fill with beans or rice.
