bullet Chicken 1 1/2 kg whole, washed and cleaned
bullet Bay leaf 1
bullet Black pepper 4
bullet Garlic 3 cloves, unpeeled
bullet Cabbage 1 medium
bullet Carrots 3 grated
bullet Capsicums 3 remove seeds and white pith, chop finely
bullet Spring onions 1 cup, chopped fine- do not use the white part
bullet Sandwich bread 2 large, ask your baker to tint it pink, green or blue with food color
bullet Eggs 4, hard boiled
bullet Fresh cream 1/2 cup
bullet Warm milk 1/2 cup
bullet Mayonnaise 1 cup
bullet Butter 1 pkt
bullet White pepper 1 tsp
bullet Black pepper 1 tsp
bullet Sugar 1 tsp
bullet Salt to taste
  • Boil chicken with bay leaf, black pepper and garlic till tender. Drain; remove meat from bones and chop in small pieces. Remove eggshells; mix eggs with chicken and grid to a paste.
  • Add butter, mayonnaise, vegetables, black and white pepper, sugar and salt along with warm milk and cream and leave in refrigerator for 20 minutes. Cut edges off the bread, spread the chicken, egg and vegetable mixture on slices of bread and put them together.
  • Cut into four pieces.
  • Serves: 15
