Flour (maida) 8 oz
Cumin seeds 1 tsp
Black pepper coarsely ground 1 tsp
Coriander leaves 1 tbsp
Green chilies 5
Ghee as required
Clove garlic 1
Salt to taste
Sieve the flour and salt together and add the cumin seeds and pepper. Grind garlic, coriander leaves and chilies and add to the flour.
Rub a little ghee into the flour and adding warm water gradually, knead into stiff dough. Make small balls of the dough and rollout the puris.
Fry in hot ghee until golden brown. Do not rollout and keep aside too many puris at a time, as then they will not puff up.
