bullet Flour (maida) 8 oz
bullet Cumin seeds 1 tsp
bullet Black pepper coarsely ground 1 tsp
bullet Coriander leaves 1 tbsp
bullet Green chilies 5
bullet Ghee as required
bullet Clove garlic 1
bullet Salt to taste
  • Sieve the flour and salt together and add the cumin seeds and pepper. Grind garlic, coriander leaves and chilies and add to the flour.
  • Rub a little ghee into the flour and adding warm water gradually, knead into stiff dough. Make small balls of the dough and rollout the puris.
  • Fry in hot ghee until golden brown. Do not rollout and keep aside too many puris at a time, as then they will not puff up.
