bullet Moong Dhal 4 oz
bullet Gram dhal (chana) 4 oz
bullet Whole wheat flour (atta) 11/4 lb
bullet Cloves 4
bullet Peppercorns 8
bullet Cardamoms 3
bullet Cumin seeds 1/2 tsp
bullet Salt 11/2 tsp or to taste
bullet Ghee
  • Soak both the dhals overnight. The next morning drain off the water and grind to a fine paste.
  • Grind the cloves, peppercorns, cardamoms and cumin seeds. Heat 1 tbsp ghee in a pan.
  • Fry the dhal paste with the ground masala and salt. Knead the wheat flour to a stiff dough with 2 tsp ghee, water and salt.
  • Divide the dough into small portions. Roll each potion into a ball. Flatten it in the palm of your hand and put in a little fried dhal.
  • Close up the dough and rollout into a thickish puri.
  • Deep-fry in ghee.
