Make
horizontal incisions in veal steaks to make deep pockets.
Flatten steaks slightly with the palm of your hand and
season with salt and pepper. Slide a slice of tongue and
cheese each into each pocket and fasten opening with wooden
cocktail stick. Roll steaks in flour, and beaten egg and
finally in breadcrumbs.
Heat
the butter and fry steaks 6-8 minutes on each side until
well browned. Arrange them on a heated serving dish and
garnish with lemon wedges and lettuce leaves.
