  • Recipe for Kid’s Lunch Box

  • Dry Walnut Pastry

  • Ingredients

  • Egg white 4
    Sugar 250 gm (grinded)
    Walnut 125 gm (roughly crushed)
    Cooking oil 1 tsp

  • Method

  • Preheat oven to 150 degree C and grease a baking pan.
    Beat egg white and sugar until get a thick batter.
    Fold crushed walnut.
    Heat cooking oil in non stick pan and shift batter in it. Cook until sugar dissolve.
    When sugar completely melts, transfer in a greased baking dish and bake about 15-20 minutes.
    Cool at wire rack and cut into slices.

  • Chicken Lollipops

  • Ingredients

  • Boneless chicken 250 gm
    Mashed potato 1
    Red chili powder 1 tsp
    Salt to taste
    Egg 1 (beaten)
    Bread crumbs as required
    Oil for fry

  • Method

  • Boil chicken with salt then shred it.
    Mix chicken, mashed potato, red chili powder and salt.
    Make small balls of mixture and insert a stick in center.
    Dip in egg and roll with bread crumbs.
    Deep fry in oil on medium heat until golden brown.

  • Spicy Omelette Toast

  • Ingredients

  • Bread 3-4 slices
    Milk 4 tbsp
    Eggs 3
    Black pepper powder ½ tsp
    Salt to taste
    Green coriander ½ bunch (chopped)
    Green chilies 3 (chopped)
    Plain flour 2 tbsp
    Cooked chicken ½ cup (shredded)
    Oil for fry

  • Method

  • Remove edge of bread and cut in triangle shape; sprinkle milk over bread slices.
    Beat eggs; add black pepper powder, salt, green coriander and green chilies.
    Gradually add plain flour then mix in cooked chicken.
    Dip bread slice in mixture and fry in frying pan until get a nice golden color from both sides.

  • Banana Pancake

  • Ingredients

  • Banana 3
    Sugar 2 tbsp or to taste
    Salt ¼ tsp
    Flour 2 cups
    Baking powder ¼ tsp
    Eggs 2
    Milk ½ cup
    Oil for fry

  • Method

  • Mash the banana into fine pulp.
    Add all ingredients except oil in pulp and mix nicely.
    Heat up non stick frying pan; add 1 tsp oil, drop batter with cooking spoon and spread it in pan by moving frying pan with help of handle. Flip pan cake when bubbles appear on top side and cook from other side.
    Pancakes are ready.

  • Pizza Bread

  • Ingredients

  • Bread 4 slices
    Pizza sauce or ketchup 4 tsp
    Filling of your choice
    Cheese as required

  • Method

  • Remove edge of bread,
    Spread 1 tsp pizza sauce or ketchup on each bread slice.
    Top with filling and sprinkle cheese.
    Microwave for 1-2 minutes or until cheese melt.

  • Chicken Roast

  • Ingredients

  • Chicken drumsticks 4
    Yogurt 4 tbsp
    Salt to taste
    Black pepper powder 1 tsp
    Red chili powder ½ tsp
    Lemon juice/vinegar 2 tsp

  • Method

  • Marinade chicken with yogurt, salt, black pepper powder, red chili powder and lemon juice/vinegar. Keep it in fridge for 2-4 hours.
    Line a baking dish with butter pepper and grease it.
    Transfer chicken on greased tray and bake for 20-25 minutes or until chicken tender.
    Note: If you don’t have oven steam it in a pan.

  • Apple Muffins

  • Ingredients

  • Apple 2 small (peeled)
    Brown sugar ¾ cup
    Oil/butter ½ cup
    Eggs 2
    Milk ½ cup
    Plain flour 1 cup
    Baking powder 1 tsp

  • Method

  • Preheat oven to 180 degree C. Grease a muffin pan.
    Coarsely grate apples in a bowl.
    Combine apples with sugar, oil, eggs and milk; beat until combine well.
    Fold in plain flour and baking powder. Mix gently.
    Spoon into 12 cups muffins pan.
    Bake for 25 minutes or until a skewer can be inserted and removed cleanly.

  • Potato Cheese Fries

  • Ingredients

  • Potato 2 medium (peeled and cut into French fries)
    Butter 1 tbsp (melted)
    Corn flour 1 tsp
    Salt ½ tsp
    Oregano ¼ tsp
    Black pepper ¼ tsp
    Cheese 4 tbsp

  • Method

  • In a bowl mix butter, corn flour, salt, oregano and black pepper.
    Toss potato until coat from all sides. Keep aside for 10 minutes.
    Place potato on greased baking tray in a single layer and bake at 180 degree C for 20-25 minutes or until potatoes are crisp. Turn once.
    Sprinkle cheese and toss once; bake for another 3-4 minutes.

  • Kid’s Special Sandwich

  • Ingredients

  • Bread slices 6
    For Carrot Spread
    Carrot ½ cup (grated)
    Mayonnaise 2 tsp
    Salt and black pepper to taste
    For Apple Spread
    Apple 1 small (grated)
    Salt and black pepper to taste

  • Method

  • Remove crust of bread slices.
    Mix carrot spread ingredients in a bowl.
    Mix apple spread ingredients in other bowl.
    Apply carrot spread on one slice.
    Apply apple spread on other slice and set it on carrot spread slice. Cover with simple bread slice.
    Repeat with other bread.
    Cut into bite size and pack kid’s lunch box.
