  • I often heard on TV people requesting about eggless vanilla cake and I thought how it would turn out. Then finally I got courage and tried it by using yogurt.  The final result was in shape of a moist and soft cake. Next time I made it with addition of coco powder and it was absolutely divine. You can décor this cake with any glaze and cream just like ordinary cake.

  • For a nutty touch pour half batter in baking pan then set a layer of crushed almonds then pour remaining batter. This cake recipe is not too sweet and rich; a great kids lunch box and perfect to serve in tea time.

  • Ingredients

  • All purpose flour 1-1/2 cups
    Plain yogurt 1 cup (thick)
    Sugar 1 cup
    Baking soda ½ tsp
    Baking powder 1-1/4 tsp
    Vegetable oil ½ cup
    Vanilla essence 1 tsp

  • Method

  • Preheat oven at 180 C. Grease a 8" cake pan with butter.
    Beat yogurt until lumps removed then add sugar; mix.

  • Add baking soda and baking powder, beat well.

  • Set aside for 5 minutes until small bubbles appear on top.

  • Now add oil and vanilla essence and beat to mix all completely. Sift flour in 3 batches while mixing with whisk or rubber spatula.

  • Shift batter in prepared pan.
    Place it on counter to get rid of air bubbles.

  • Bake in preheated oven at 180 C for 30-35 minutes until the top turns a golden brown and a tooth pick/fork inserted into the centre of the cake comes out clean.

  • Cool it on wire rake. Cut into slices and serve.

  2. Vinay Kharbanda, As you know this is egg-less so we are using baking powder and baking soda as leavening agent. So check did you use good quality baking powder and soda. Be careful in setting temperature of oven because sometimes high temperature of oven also does not allow to rise cake.
