Chicken,
boneless cut into cubes 1 kg |

Tomatoes,
finely chopped 4 medium |
 |
Onions, cut
into rings 2 large |
 |
Green chillies,
finely chopped 6 |

Ginger /
garlic paste 2 tsp |
 |
Chilli powder
1/2 tsp |
 |
Coriander
powder 1/2 tsp |
 |
Black pepper
powder 1/2 tsp |
 |
Garam masala
powder pinch |
 |
Desi ghee or
oil 7 tbsp |
 |
Coriander and
mint leaves, 2 tbsp, finely chopped |
 |
Salt to taste |

- Heat
ghee / oil in a saucepan, add chicken and cook on high heat
till chicken is cooked and no liquid remains. Add ginger /
garlic paste, fry for a minute. Then add tomatoes, coriander
powder, red chilli powder and salt. Mix well on medium heat.
- Keep
stirring till tomatoes are cooked and oil separates from the
chicken. Add green chillies, onion rings, black pepper and
mint and coriander leaves. Fry on high heat for 2 minutes.
- Cover
and leave on very low heat for few minutes.
- Garnish
with mint and coriander leaves.
- Serve
hot with parathas.
