fenugreek and coriander. |

Chicken 1 kg/2
birds, cut into 8 pieces each |

Coriander
leaves 30 gm/2 tbs |
 |
Coriander
seeds, pounded 5 gm/1 tsp

Garam masala
10 gm/2 tsp |
 |
Garlic paste
20 gm/4 tsp |
 |
Ginger,
chopped 45 gm/3 tbs |
 |
Green chillies,
slit 4 |
 |
Kasoori methi
5 gm/1 tsp |
 |
Oil 80 ml/ 1/3
cup |
 |
Red chillies,
whole, pounded 8 |
 |
Sat to taste

Tomatoes,
chopped 1 kg |
|

- Heat
oil in a kadhai. Sauté garlic paste till brown. Add the
pounded red chillies and the freshly pounded coriander seeds
and stir for a few seconds. Add the tomatoes and bring to a
boil. Add half the coriander leaves and all the ginger, slit
green chillies and salt. Simmer for 5 minutes. Add the
chicken and simmer, stirring occasionally till the gravy
thickens and the chicken is tender. Once the fat surfaces,
stir in the garam masala and the kasoori methi. Cook for 2
minutes.

Preparation: 40 minutes, Cooking: 30 minutes
- To
Serve: Garnish with coriander and serve with nann or roti.
