bullet 1/2 kg chicken liver / Kaleji
bullet 1 tbsp pepper
bullet 2-3 tbsp Worcestershire sauce
bullet 1 lime
bullet 3-4 tbsp oil
bullet Salt
  • Slice liver into 2 × 1 inch pieces. Sprinkle salt, pepper and Worcestershire sauce and leave to marinate for 2-3 hours or longer.
  • Heat oil in frying pan, add marinated liver and fry on medium heat till just about done (around 7-10 minutes).
  • It should be spongy to the touch. Do not overcook as it will become hard and dry. Remove from heat, sprinkle lime juice and serve in its own gravy with fried potato chips around it or on a bed of mashed potatoes.

Serves 4 - 6
Preparation Time: 2 -3 hours
Cooking Time: 20 minutes
