bullet Chicken fillet 1/2 kg
bullet Soya sauce 1/4 cup
bullet Honey 2 tbsp
bullet Curry powder 2 tbsp
bullet Grated ginger 1 tbsp
bullet Salt 1 tsp
bullet Lemon juice 2 tbsp
bullet Roasted cumin seeds 1 tsp

Ingredients for peanut sauce

bullet Peanut butter 1/2 cup
bullet Coconut milk 1 cup
bullet Chili sauce 2 tbsp
bullet Lemon juice 2 tbsp
bullet Turmeric powder 1/4 tsp
bullet Ginger/ garlic 1 tsp

For garnishing

bullet Chopped peanuts (roasted)
bullet Cucumber slices
  • Soak 20 wooden skewers in cold water for about 30 minutes. Cut the chicken into thick flat strips of about 6 cm (2 inches) long and 2 cm (1 inch) wide. Thread a strip of chicken into each skewer. Next, mix all the ingredients of marinade and pour over chicken.
  • Cover and refrigerate for 30 mins. Put all the ingredients of peanut sauce in a heavy-base pan with 1/2 cup water. Stir over low heat until the mixture boils. Remove from heat. Heat a BBQ grill or char grill. Brush sticks with oil. Cook each side for 2-3 mins or fry in 2 tbsp. Oil. Top with peanut sauce and garnish with chopped peanuts and cucumber slices.
