Soak 20
wooden skewers in cold water for about 30 minutes. Cut the
chicken into thick flat strips of about 6 cm (2 inches) long
and 2 cm (1 inch) wide. Thread a strip of chicken into each
skewer. Next, mix all the ingredients of marinade and pour
over chicken.
Cover
and refrigerate for 30 mins. Put all the ingredients of
peanut sauce in a heavy-base pan with 1/2 cup water. Stir over
low heat until the mixture boils. Remove from heat. Heat a
BBQ grill or char grill. Brush sticks with oil. Cook each
side for 2-3 mins or fry in 2 tbsp. Oil. Top with peanut
sauce and garnish with chopped peanuts and cucumber slices.
