Peel
mangoes and dice. Sprinkle with salt and keep aside for and
hour. Grind the garlic, ginger and chilies with 1/4 pint
vinegar to make a smooth paste.
Put
mangoes and sugar in a saucepan and boil together till the
mangoes are tender and the mixture forms a thick jam. Add
the paste and stir gently.
Add the
peeled and chopped plums and cook stirring for 8 minutes.
Add vinegar and salt and simmer for 15 minutes.
